- Plantain — to buy3
- Neutral oil — to buy4 tbsp
- Salt — to buy1 pinch
Preparation
Choose very ripe plantains, with yellow skin speckled with black: that's when they're sweetest and softest once fried.
Peel them and cut into diagonal slices about 1 cm thick.
Heat the neutral oil in a pan over medium-high heat.
Lay the plantain slices in the hot oil without overlapping, frying in batches if needed.
Fry for 3-4 minutes per side, until golden and caramelized at the edges.
Drain on paper towel, lightly salt with a pinch of salt to contrast the sweetness, and serve immediately as a side.
