- Pork — to buy4 escalopes
- Flour — to buy150 g
- Bière — to buy200 ml
- Egg — to buy2
- Salt — to buy1 pinch
Preparation
Flatten the pork escalopes between two sheets of cling film to about 1 cm thick, season with salt and pepper on both sides.
In a bowl, whisk the flour, beer, egg yolks and a pinch of salt until smooth, a bit thicker than pancake batter.
Whip the egg whites to stiff peaks and fold them gently into the beer batter to lighten it and make it crisp when cooked.
Heat a generous amount of oil in a large pan over medium-high heat.
Dip each escalope into the beer batter, coating it well, then lower it gently into the hot oil.
Fry for 3-4 minutes per side until the batter is golden and crisp, drain on paper towel.
Serve at once with a warm potato salad or fries.
