Rice fritters

Ingredients

- Rice — to buy300 g
- Rice flour — to buy100 g
- Sugar — to buy50 g
- Baker's yeast — to buy1 tsp
- Salt — to buy1 pinch
- Olive oil — to buy500 ml (for frying)
Preparation
Cook the rice if not already done, then roughly mash it with a fork so it sticks together.
In a bowl, mix the mashed rice, rice flour, sugar and salt.
Dissolve the baker's yeast in a little warm water, then stir it into the mixture.
Gradually add water until you get a thick batter that falls heavily off the spoon.
Cover and let rest for 30 minutes in a warm spot; the batter should rise slightly.
Heat the frying oil to 170°C, then drop spoonfuls of batter into the oil.
Fry for 3 to 4 minutes, turning halfway through, until the fritters are golden, then drain on paper towel and serve hot.
