Preparation
Prick the black pudding lightly with a fork to keep it from bursting while it cooks.
Melt a little butter in a pan and brown the apple wedges for 5-6 minutes over medium heat, turning gently so they don't break apart.
Keep the apples warm.
In the same pan, cook the black pudding for 4-5 minutes on each side over medium-low heat, until the skin is nicely crisp and the inside is hot.
In another pan, fry the sliced onion in a little butter for 8-10 minutes over low heat, until soft and lightly caramelized.
Season lightly with salt and pepper, and serve the black pudding hot with the apples and caramelized onion on the side.
