Preparation
Let the butter soften ahead of time (not melted), then beat it with the sugar until creamy and pale.
Add the egg and vanilla, and mix well to combine.
Add the flour, baking powder and a pinch of salt, mixing just enough to combine — overworking the dough develops the gluten and gives hard cookies instead of soft ones.
Add the chocolate chips and fold in gently with a spatula.
Wrap the dough and let it rest in the fridge for 30 minutes (ideally longer, up to 24 hours) — this firms up the butter and concentrates the flavours, so the cookies spread less and taste better.
Shape walnut-sized balls of dough, spacing them well on a lined baking sheet (they'll spread while baking), and bake for 10-12 minutes at 180°C.
Take them out when the edges are golden but the centre is still pale and a little soft — they'll finish cooking as they cool on the warm sheet, which guarantees soft-centred cookies. Let them cool for 5 minutes on the sheet before moving them.
