Ingredients
- Bread — to buy4 tranches
- Butter — to buy30 g
- Flour — to buy1 c. à s.
- Milk — to buy150 ml
- Ham — to buy2 tranches
- Cheese — to buy100 g
- Egg — to buy2
Preparation
Lightly butter the outside of the 4 bread slices on one side (this is the side that will turn golden).
Make a quick béchamel: melt the butter in a saucepan, add the flour and stir for 1 minute over low heat without letting it colour, then whisk in the milk little by little to avoid lumps. Cook for 2 to 3 minutes, stirring constantly, until thickened.
Spread the béchamel inside two slices, add the ham and grated cheese, then close with the other two slices (buttered side out).
Brown the sandwiches in a pan or in a 180 °C (350 °F) oven, 5 minutes per side, until the cheese melts and the bread is golden.
Meanwhile, fry the eggs sunny-side up in a separate pan over low heat, so the white sets and the yolk stays runny.
Top each croque with a fried egg right before serving, while still hot.
