Preparation
Peel and finely grate the potatoes and onion, tip everything into a strainer and press hard to squeeze out as much liquid as possible: crispy deruny need a batter that isn't too wet.
Mix the drained grated mixture with the eggs, flour, salt and pepper until you get a batter that's smooth but still a little chunky.
Heat the oil in a large pan over medium-high heat.
Drop tablespoons of batter, flattening them slightly, cook for 3-4 minutes per side until the pancakes are golden and crisp at the edges.
Drain on paper towel between batches.
Serve immediately, piping hot, with a spoonful of sour cream.
