- Braising beef — to buy600 g
- Olive oil — to buy2 tbsp
- Onion — to buy1
- Garlic — to buy2 cloves
- Turmeric — to buy1/2 tsp
- Cumin — to buy1/2 tsp
- Chili pepper — to buy1/2
- Stock — to buy500 ml
- Fenugrec (hilbah) — to buy2 tbsp
- Bread — to buy4 flatbreads
Preparation
Brown the beef pieces in oil with the onion and garlic, 6 minutes until well coloured.
Add the turmeric, cumin and chilli, cover with broth, cover and simmer 1 hour 30 minutes, until the meat shreds easily with a fork.
Shred the beef directly in its broth, then whisk a little fenugreek powder with warm water until it foams.
Pour the piping hot shredded beef stew into a clay dish, making sure it's still sizzling.
Cover with the fenugreek foam and serve at once with flatbread.
