Ingredients
- White beans — to buy400 g
- Chorizo — to buy200 g
- Bacon bits — to buy150 g
- Onion — to buy1
- Garlic — to buy3 gousses
- Tomato paste — to buy1 c. à s.
- Feuille de laurier — to buy2 feuilles
- White cabbage — to buy1/2
- Rice — to buy250 g
Preparation
If your white beans are dried, soak them in a large volume of cold water overnight, then drain and rinse them (if using already-cooked jarred beans, skip straight to the next step).
In a large pot, brown the sliced chorizo and bacon for 4-5 minutes over medium heat, until they release their fat and start to colour.
Add the sliced onion and garlic, cook for 3-4 minutes until the onion is tender, then add the tomato paste and mix for 1 minute to coat everything well.
Add the white beans and the bay leaf, and cover generously with water (at least 2 cm above the beans), bring to a boil then simmer covered for 1 to 1.25 hours over low heat, until the beans are very soft and the sauce has thickened slightly.
Meanwhile, cook the white rice separately according to the package instructions.
Add the sliced white cabbage near the end of cooking and simmer for another 10 minutes, until tender.
Remove the bay leaf, taste and adjust the seasoning, then serve the feijoada piping hot with the white rice.
