- Ground millet — to buy350 g
- Water — to buy900 ml
- Salt — to buy1 pinch
Preparation
Toast the ground millet dry in a pan for 3 minutes, stirring, until fragrant.
Bring the salted water to the boil in a saucepan.
Sprinkle in the toasted millet, stirring constantly to avoid lumps.
Reduce the heat and cook for 15 to 20 minutes, stirring regularly with a wooden spatula, until you get a smooth, elastic paste.
Wet a spoon and shape the hot paste into smooth balls.
Arrange the balls on a plate, covering them with a damp cloth so they don't dry out.
Serve hot, alongside a soup or a rich sauce for dipping the fufu.
