- Red lentils — to buy250 g
- Spring onion — to buy4
- Fresh cilantro — to buy1/2 botte
- Chili pepper — to buy2
- Garlic — to buy2 gousses
- Turmeric — to buy1/2 c. à c.
- Cumin — to buy1 c. à c.
- Flour — to buy2 c. à s.
- Neutral oil — to buyfriture
- Salt — to buy1 c. à c.
Preparation
Soak the red lentils for 2 hours in cold water (or 30 minutes in hot water), then drain well.
Blend the soaked lentils with the garlic, turmeric, cumin and a pinch of salt, pulsing until you get a coarse, still slightly grainy paste.
Add the finely chopped spring onion and coriander and the chopped chillies, mix, then stir in the flour to lightly bind the mixture.
Heat 4-5 cm of oil in a pot to 170°C.
Shape small flattened balls using two tablespoons and gently drop them into the hot oil.
Fry for 3-4 minutes, turning halfway through, until golden and crisp outside, still soft inside.
Drain on paper towel and serve hot, as a starter or with bread.
