- Chicken — to buy1 chicken, cut into pieces (1.2 kg)
- Garlic — to buy4 cloves, crushed
- Turmeric — to buy1 tsp
- Cinnamon — to buy1 stick
- Cumin — to buy1 tsp
- Onion — to buy2, sliced
- Tomato — to buy2, chopped
- Rice — to buy400 g basmati rice, rinsed
- Stock — to buy800 ml
- Raisins — to buy30 g, to serve
Preparation
Marinate the chicken pieces with crushed garlic, turmeric, cinnamon and cumin for 20 minutes.
Brown the chicken in hot oil for 8 minutes on each side, then set aside.
In the same pot, sauté the sliced onion and tomato for 5 minutes, then add the tomato paste and remaining spices.
Add the rinsed rice, pour in broth to cover, place the chicken back on top and bring to a boil.
Cover and cook over low heat for 20 minutes without lifting the lid, until the rice has absorbed all the broth.
Let rest off the heat for 5 minutes, fluff the rice with a fork and serve with raisins and toasted almonds.
