Ingredients
- Ground beef — to buy500 g
- Onion — to buy1
- Garlic — to buy2 cloves
- Parsley — to buy1 bunch
- Oregano — to buy1 tsp
- Bread — to buy1 slice
- Milk — to buy50ml
- Olive oil — to buy3 tbsp
Preparation
In a large bowl, mix the ground beef with the very finely grated onion (it should almost melt into the meat), crushed garlic, chopped parsley, oregano and the slice of bread soaked in milk, squeezed out and crumbled.
Season with salt and pepper, then knead well by hand until you get an even, slightly sticky mixture.
Cover the bowl and let it rest for 15 minutes in the fridge: this rest lets the flavours meld and helps the mixture hold together better when cooked.
Shape small, slightly flattened patties between your hands, about the size of a classic meatball.
Heat the olive oil over medium-high heat in a pan and brown the keftedes for 3-4 minutes per side, without moving them around too much, until nicely coloured and cooked through.
Serve hot with a lemon wedge to squeeze over and a fresh salad.
