- Bulgur wheat — to buy200 g
- Tomato — to buy2
- Cucumber — to buy1
- Red onion — to buy1
- Parsley — to buy1 bunch
- Fresh mint — to buy1 bunch
- Tomato paste — to buy2 tbsp
- Lemon — to buy1
- Olive oil — to buy3 tbsp
- Aleppo pepper flakes — to buy1 tsp
- Salt — to buy1 pincée
Preparation
Pour the fine bulgur into a bowl, cover it with boiling water, add the tomato paste and mix well. Cover right away (with a plate or film) and let it swell for 15 minutes, until the bulgur has absorbed all the water and is tender to the bite.
Meanwhile, cut the tomato, cucumber and red onion into very small dice, and finely chop the parsley and mint.
Once the bulgur is warm, fluff it with a fork to separate the grains, then add all the vegetables and herbs.
Season with the lemon juice, olive oil, pul biber and a pinch of salt, mix well and taste to adjust the salt and tang.
Let it rest for 15 minutes in the fridge before serving, so the flavours meld well, on lettuce leaves if you want to serve it the Turkish way.
