Czech kolache with apricot

- Flour — to buy400 g
- Milk — to buy200 ml
- Baker's yeast — to buy10 g
- Sugar — to buy60 g
- Butter — to buy60 g
- Egg — to buy2
- Confiture d'abricot — to buy150 g
Preparation
Dissolve the yeast and a teaspoon of sugar in the warm milk, let sit for 10 minutes until foamy.
In a bowl, mix the flour, remaining sugar and a pinch of salt, add the yeasted milk, eggs and melted, slightly cooled butter, knead for 8-10 minutes until soft.
Cover and let rise for 1 hour, until the dough doubles in size.
Knock back the dough and divide it into 12 equal portions, shape each into a smooth ball.
Place the balls spaced apart on a tray, gently flatten the centre of each with the bottom of a glass to form a hollow.
Fill each hollow with a spoonful of apricot jam, let rise for another 20 minutes.
Bake for 15-18 minutes at 190°C until the kolache are nicely golden, let cool slightly before serving.
