Luchi, puffed fried bread (Bangladesh)

Ingredients
- Flour — to buy300 g
- Salt — to buy1/2 tsp
- Neutral oil — to buy1 tbsp + 500 ml (for frying)
Preparation
Mix the flour and salt in a bowl, then work in 1 tablespoon of oil, rubbing between your hands until you get a sandy texture.
Add the water little by little and knead for 5 minutes until you get a firm, smooth, non-sticky dough.
Cover with a damp towel and let it rest for 20 minutes: the gluten relaxes, making it easier to roll out.
Divide the dough into small even balls, then roll each one into a thin, round disc about 10 cm across.
Heat the frying oil in a deep pan to about 180°C.
Slide a disc of dough into the hot oil and, with the back of a slotted spoon, gently press around the edges to help it puff into a golden ball; flip once and cook for a total of 30-40 seconds.
Remove as soon as it puffs up and turns lightly golden (before it becomes brittle), drain on paper towel and serve immediately, piping hot, with alur dom.
