Ingredients
serves 4
- Rice flour — to buy300 g
- Palm sugar — to buy120 g
- Grated coconut — to buy80 g
- Sesame seeds — to buy2 tbsp
Preparation
Mix the rice flour with a little warm water, adding it gradually, until you get a soft dough that does not stick to your hands.
Cut the palm sugar into small cubes that will become the melting center.
Take small pieces of dough, flatten in your palm, place a palm sugar cube in the center and close into a smooth ball.
Bring a large pot of water to a boil and gently drop in the balls.
Cook until they float to the surface, then 1-2 more minutes, at which point they are cooked and the sugar center has melted.
Drain and immediately roll the warm balls in grated coconut and toasted sesame seeds.
Serve warm: on first bite, the melted palm sugar flows out, that is the whole point of this traditional dessert.
