Ingredients
- White fish fillet — to buy600 g
- Lime — to buy1
- Garlic — to buy2 cloves
- Onion — to buy1
- Bell pepper — to buy1
- Olive oil — to buy2 tbsp
- Tomato — to buy2
- Coconut milk — to buy400ml
- Fresh cilantro — to buy1 bunch
- Rice — to buy200 g
Preparation
Cut the white fish into large chunks (5-6 cm) and marinate for 10-15 minutes with the lime juice, crushed garlic and a pinch of salt, in the fridge.
Heat the olive oil in a wide pot or deep pan, add the sliced onion and bell pepper and cook for 4-5 minutes over medium heat, until tender and translucent.
Add the diced tomato and simmer for 5 minutes over low heat, mashing it a little with a spoon, until it starts to break down into a sauce.
Pour in the coconut milk, bring to a light simmer (not a hard boil, which can make it split), then gently add the fish pieces, drained of their marinade.
Poach covered for 8-10 minutes over low heat, without stirring too much so the fish doesn't break apart — gently shake the pot instead. The fish is done when it turns opaque and flakes easily with a fork.
Sprinkle with chopped fresh cilantro and serve immediately with white rice.
