Cold sesame noodles (Japan)

- Wheat noodles — to buy200 g
- Sesame oil — to buy2 tbsp
- Soy sauce — to buy2 tbsp
- Egg — to buy1
- Spring onion — to buy2
Preparation
Cook the wheat noodles following the pack instructions, then drain and rinse thoroughly under cold water, rubbing them gently between your fingers to remove the starch: this is what keeps them from sticking once cold.
Boil the egg for 9 minutes for a fully set yolk, plunge it straight into cold water to stop the cooking, let it cool, then cut it in half.
Drain the noodles one last time so no water remains, or the dressing will end up watery.
Toss the cold noodles with the sesame oil and soy sauce, lifting them with a fork or chopsticks, until well coated and glossy.
Serve in well-chilled bowls.
Top with the egg and scatter with sliced spring onion just before serving.
