- Braising beef — to buy1 kg

Preparation
Choose good cuts of goat or beef with a little fat on them: that fat is what melts onto the coals and flavors the meat.
Rub the meat with salt, pepper and a drizzle of oil, nothing more: nyama choma is barely marinated, the flavor comes from the wood fire.
Prepare glowing charcoal embers with no flame, and set the grill about 15 cm above them.
Place the meat and grill for 40 to 50 minutes, turning every 5-10 minutes, until well caramelized outside and tender inside.
Let it rest for 5 minutes, then cut into pieces by hand or with a cleaver right on a board.
Serve immediately with kachumbari and ugali, just like at Kenyan nyama choma joints.
