Fish pepper soup (Nigeria)

- White fish fillet — to buy600 g
- Lime — to buy1
- Stock — to buy1 L
- Onion — to buy1
- Ginger — to buy20 g
- Garlic — to buy3 cloves
- Chili pepper — to buy1 tsp
- Paprika — to buy1 tsp
- Salt — to buy1 tsp
- Fresh cilantro — to buy1 bunch
Preparation
Cut the fish into large pieces and rinse them in water with a splash of lime juice to remove any odour.
Heat the stock with the sliced onion, crushed ginger and garlic in a large pot, bring to a boil.
Add the chilli, paprika and salt, simmer uncovered for 10 minutes so the spices really infuse the broth.
Add the fish gently (so it doesn't break apart) and poach over low heat for 10-12 minutes, until just cooked and easily flaking.
Taste and adjust the seasoning: pepper soup should be well spiced and fragrant, almost like a healing broth.
Sprinkle with fresh cilantro and serve immediately, piping hot, in large bowls.
