- Stock — to buy700 ml
- Olive oil — to buy3 tbsp
Preparation
Heat the oil in a pot and sauté the sliced onion for 10 minutes until deeply golden and slightly caramelized: that caramelization is what gives pilau its brown color.
Add the garlic, ginger, cinnamon, cloves and cardamom, cook for 1 minute until fragrant.
Add the meat and brown it on all sides for 5-8 minutes.
Add the rinsed rice and stir to coat it in the spices.
Pour in hot stock to cover, season with salt, cover and cook over low heat for 18-20 minutes without lifting the lid.
Let it rest for 5 minutes off the heat then fluff with a fork before serving with kachumbari.
