Grilled Fish with Tamarind Sauce

- White fish fillet — to buy4 filets
- Tamarind — to buy2 tbsp (paste)
- Garlic — to buy2 cloves
- Chili pepper — to buy1
- Honey — to buy1 tbsp
- Neutral oil — to buy2 tbsp
- Salt — to buy1 pinch
Preparation
In a bowl, thin the tamarind paste with 3 tbsp of warm water to make a fluid sauce, add the crushed garlic, finely chopped chilli, honey and a pinch of salt.
Brush the fish fillets with half of this tamarind sauce, let marinate in the fridge for 15 minutes.
Heat a grill or a pan with a drizzle of oil over high heat.
Sear the fillets skin-side down for 3-4 minutes until nicely crisp, then gently flip and cook for another 2-3 minutes on the other side.
Meanwhile, reduce the remaining tamarind sauce in a small pan for 3-4 minutes over low heat until it thickens slightly.
Coat the grilled fillets with the reduced tamarind sauce and serve immediately with creole rice.
