Ingredients
- Rice — to buy400g
- Neutral oil — to buy2 tbsp
- Garlic — to buy2 cloves
- Chicken — to buy1 filet
- Egg — to buy2
- Fish sauce — to buy1 tbsp
- Soy sauce — to buy1 tbsp
- Lime — to buy1
Preparation
Ideally use rice cooked the day before and well chilled in the fridge: the grains are firmer and separate better while cooking, unlike fresh rice which would give a sticky fried rice.
Heat the oil over high heat in a wok and cook the minced garlic for 30 seconds, until fragrant without burning.
Add the chicken cut into small pieces and stir-fry for 4-5 minutes, until nicely browned and cooked through.
Push everything to the side of the wok, crack the egg into the free space and scramble it quickly, then mix with the rest.
Add the rice, breaking up the grains well with your fingers or a spatula, the fish sauce and soy sauce, stir-fry for 3-4 minutes over high heat, stirring constantly.
Serve with a lime wedge to squeeze over just before eating.
