Ingredients
- Flour — to buy200 g
- Egg — to buy4
- White cabbage — to buy100 g
- Tomato — to buy1
- Onion — to buy1
- Olive oil — to buy2 tbsp
- Salt — to buy1 pinch
Preparation
Mix the flour with water, a pinch of salt and a drizzle of oil until you get a soft dough, shape it into a ball and let it rest for 10 minutes.
Roll out the dough thinly into a wide disc and cook it dry in a hot pan for 1-2 minutes on each side, like a chapati.
Beat the eggs with the finely sliced cabbage, diced tomato and onion, season with salt and pepper.
Heat a drizzle of oil in the pan and pour in the egg mixture to form a thin omelet.
Cook for 2-3 minutes until the bottom is set, then place the hot chapati directly on top of the omelet still in the pan.
Cook for another 30 seconds so the omelet sticks well to the chapati, then flip the whole thing and slide it onto a board.
Roll it up tightly like a wrap and cut in half, it is Uganda's most popular street food sandwich, whose name comes from a play on words on 'roll eggs'.
