Roast pork with mustard

Ingredients
- Pork — to buy1 kg (rôti)
- Mustard — to buy3 c. à s.
- Onion — to buy1
- Cream — to buy150 ml
- Garlic — to buy2 gousses
Preparation
Preheat the oven to 180 °C (350 °F). Take the roast out of the fridge 20 minutes before cooking so it isn't too cold at the centre.
Coat the pork roast with mustard on all sides, season with salt and pepper.
Brown it for 5 minutes on all sides in an oven-safe pot with a drizzle of oil and the sliced onion and garlic, until the meat is nicely coloured all over: this browning is what gives the sauce its flavour.
Roast covered for 45 minutes, basting regularly with the pan juices so the meat doesn't dry out.
Check for doneness: the roast is ready when the juices run clear (or 63-65 °C / 145-150 °F at the core with a thermometer). Remove from the pot and let rest for 10 minutes under a sheet of foil.
Meanwhile, stir the cream into the pan juices, bring to a gentle simmer while scraping up the browned bits, and let reduce for 2-3 minutes. Slice the roast and serve coated with this sauce.
