Ifisashi (greens in peanut sauce)

- Spinach — to buy500 g
- Peanut paste — to buy4 tbsp
- Onion — to buy1
- Tomato — to buy2
- Water — to buy200 ml
- Salt — to buy1 pincée
Preparation
Wash the leafy greens thoroughly (spinach, or pumpkin/cabbage leaves if you can find them) and roughly shred them.
Slice the onion and dice the tomatoes.
In a pot with no added fat, sweat the onion and tomato over low heat for 5 minutes with 2-3 tbsp of water, until they start to soften.
Add the shredded greens, cover and let them wilt for 5 minutes, stirring once.
Loosen the peanut paste with the warm water to make a smooth cream, then pour it into the pot.
Simmer over low heat for 10-12 minutes, stirring regularly so the sauce doesn't catch, until it thickens and coats the greens.
Season with salt, taste, adjust and serve hot with nshima: this is one of the emblematic dishes of Zambian cuisine.
