Sinigang, sour tamarind soup (Philippines)

Ingredients
- Pork — to buy500 g
- Onion — to buy1
- Tomato — to buy2
- Tamarind — to buy3 tbsp
- Potato — to buy2
- Turnip — to buy1
- Green beans — to buy150 g
- Spinach — to buy150 g
- Salt — to buy1 tsp
- Fish sauce — to buy2 tbsp (on the side)
Preparation
Cook the pork in a large pot with water, bring to a boil, skim carefully, then simmer covered for 25 minutes over low heat until tender.
Add the onion and tomato cut into wedges, simmer for another 5 minutes until they start to break down.
Dissolve the tamarind in a little hot water, strain to keep only the juice, and pour it into the pot: this fruity sourness is what defines sinigang.
Add the potatoes cut into pieces, simmer for 10 minutes until they start to soften.
Add the radish (or turnip) and green beans, cook for another 8-10 minutes, until all the vegetables are tender.
Add the spinach at the very end, let it wilt for just 2 minutes so it keeps its colour.
Season with salt, taste and adjust the sourness with a little more tamarind if needed, then serve piping hot with plain rice and fish sauce on the side.
