Canadian Split Pea Soup

- Split peas — to buy300 g
- Onion — to buy1
- Carrot — to buy2
- Celery stalk — to buy1 branche
- Bacon bits — to buy150 g
- Feuille de laurier — to buy1 feuille
- Stock — to buy1,5 l
- Salt — to buy1 pincée
- Pepper — to buy1 pincée
Preparation
Rinse the split peas under cold water and drain.
In a large pot, cook the diced onion, carrot and celery with the bacon lardons for 6-7 minutes over medium heat, until the vegetables start to brown.
Add the split peas and bay leaf, pour in the broth to cover, and bring to a boil.
Lower the heat and simmer covered for 1 to 1 hour 15 minutes, stirring occasionally, until the peas are completely broken down and the soup is thick.
Remove the bay leaf, taste and adjust salt and pepper (the bacon already adds quite a bit of saltiness).
Serve piping hot, with bread on the side.
