- Chicken — to buy600g
- Soy sauce — to buy2 tbsp
- Garlic — to buy3 cloves
- Ginger — to buy15g
- Five-spice powder — to buy1 tsp
- Cornstarch — to buy4 tbsp
- Basil — to buy1 bunch
- Sichuan pepper — to buy1 tsp
Preparation
Cut the chicken into small 3cm pieces, marinate with soy sauce, crushed garlic, ginger and five-spice, 1h chilled.
Drain the chicken, generously coat each piece in sweet potato starch (or cornstarch).
Heat the oil to 175°C in a large pot.
Fry the chicken 5-6 min in small batches until golden and cooked through.
Drain on paper towel, let rest 2 min.
Fry again 1-2 min at 190°C for an ultra-crispy second frying.
Quickly toss the basil leaves into the hot oil 10 sec until crisp and translucent.
Mix the chicken and fried basil, sprinkle with salt and Sichuan pepper, serve immediately.
