- Sliced beef — to buy500 g
- Aji amarillo (yellow chili) — to buy2
- Garlic — to buy2 cloves
- Vinegar — to buy2 tbsp
- Cumin — to buy1 tsp
- Sweet potato — to buy1
- Corn — to buy2 cobs
Preparation
Cut the beef into even cubes, about 3cm/1¼ inch.
Blend the aji amarillo, crushed garlic, vinegar and cumin into a smooth marinade, then pour it over the beef cubes in a shallow dish. Mix well so every piece is coated.
Cover and marinate for at least 30 minutes in the fridge (ideally 1-2 hours for more flavour).
Thread the marinated meat cubes tightly onto skewers.
Heat the barbecue or oven grill to high heat. Grill the skewers for 3-4 minutes per side, basting regularly with the remaining marinade, until the meat is nicely coloured outside and still juicy inside.
Meanwhile, grill or boil the sweet potato and corn cut into chunks.
Serve the skewers immediately with the grilled sweet potato and corn on the side, street-vendor style.
