- Cheese — to buy300 g
- Red onion — to buy1
- Gherkin — to buy4
- Vinegar — to buy2 tbsp
- Olive oil — to buy3 tbsp
- Ciboulette — to buya few sprigs
Preparation
Cut the Appenzeller into small sticks or regular 1 cm cubes: this is the base of this classic Swiss Alpine cheese salad.
Finely slice the red onion and cut the gherkins into thin rounds.
In a bowl, mix the vinegar, oil, a pinch of salt and pepper to make the dressing.
Add the cheese, onion and gherkins to the dressing and toss gently to coat every piece without crushing it.
Let it marinate in the fridge for at least 1 hour: the cheese will soften slightly and soak up the flavours.
Scatter with chopped chives just before serving and pair with crusty country bread.
