- Flour — to buy300 g
- Olive oil — to buy1 tbsp
- Honey — to buy150 g
- Butter — to buy30 g
Preparation
Bring the water to a boil with a pinch of salt.
Pour in the flour in a stream while whisking vigorously to avoid lumps, then lower the heat.
Cook on low heat 15-20 minutes, stirring constantly with a wooden spoon, until the dough becomes thick, smooth and pulls away from the sides — it takes real arm work, but that's what gives it its signature stretchy texture.
Shape the hot dough into a smooth ball in a deep dish, using a spoon dipped in oil.
Make a well in the centre, pour in the melted honey with a little butter and serve at once, piping hot.
