- Sorghum flour — to buy300 g
- Salt — to buy1 tsp
Preparation
Bring a large amount of salted water to a boil in a heavy-bottomed pot.
Pour the sorghum flour in a thin stream while whisking vigorously to avoid lumps.
Lower the heat and keep stirring vigorously with a wooden spoon for 10-12 minutes, the dough should get firmer and pull away from the sides.
When the dough forms a smooth, elastic ball that resists the spoon, it is done.
Shape the dough into a smooth dome in the center of a deep dish using a wet spoon.
Make a well in the center and pour in a well-seasoned sauce or stew, asida is eaten by dipping small pieces into it.
