Ingredients
- Banana — to buy4
- Flour — to buy100g
- Sugar — to buy1 tbsp
- Neutral oil — to buy500ml
- Honey — to buy2 tbsp
Preparation
Peel the bananas (pick ones that are ripe but still firm) and cut them in half lengthwise, then into chunks if they're large.
Mix the flour with a little water and a pinch of sugar until you get a batter thick enough to coat the back of a spoon: too runny and the crust won't hold up while frying.
Dip each banana piece in the batter, making sure it's coated on all sides.
Heat the frying oil over medium-high heat (it's ready when a drop of batter sizzles instantly) and brown the bananas for 2-3 minutes, turning them, until nicely crisp and golden outside.
Drain on paper towel for a moment to remove excess oil.
Drizzle with honey before serving hot: the contrast between the hot, crisp shell and the runny honey is what makes this Thai street dessert so good.
