Millet fritters

- Millet flour — to buy250 g
- Sugar — to buy50 g
- Salt — to buy1 pinch
- Baker's yeast — to buy1 tsp
- Water — to buy200 ml
- Olive oil — to buy500 ml (for frying)
Preparation
Toast the millet flour dry in a pan for 2 minutes, stirring, to develop its flavour, then let it cool.
In a bowl, mix the toasted millet flour with the sugar and salt.
Gradually whisk in the water until you get a thick, smooth batter.
Stir in the baker's yeast dissolved in a little warm water.
Cover and let rest for 30 minutes in a warm spot; the batter should rise slightly and become bubbly.
Heat the frying oil to 170°C, drop spoonfuls of batter into the oil.
Fry for 3 to 4 minutes, turning halfway through, drain on paper towel and serve hot, dusted with sugar.
