Comorian Fish Skewers

- White fish fillet — to buy600 g
- Lime — to buy2
- Garlic — to buy3 cloves
- Ginger — to buy1 piece (3 cm)
- Chili pepper — to buy1
- Turmeric — to buy1 tsp
- Neutral oil — to buy3 tbsp
- Salt — to buy1 tsp
- Fresh cilantro — to buy1/2 bunch
Preparation
Cut the white fish into even 3 cm cubes so they cook evenly on the skewers.
Prepare the marinade: blend or pound together the garlic, ginger, deseeded chilli, turmeric, lime juice, oil and salt into a smooth paste.
Coat the fish cubes with the marinade, cover and let rest in the fridge for 20 minutes — no longer, or the lime would start to "cook" the fish.
Thread the cubes onto wooden skewers pre-soaked in water, packing them snugly.
Heat a grill or griddle pan over high heat, brush it with a little oil, then sear the skewers for 2-3 minutes per side until the fish is golden and just cooked through.
Sprinkle with chopped coriander and serve immediately with coconut rice or a tomato salad.
