- Onion — to buy1
- Olive oil — to buy2 tbsp
- Garlic — to buy3 cloves
- Turmeric — to buy1 tsp
- Chicken — to buy800 g
- Tomato — to buy3
- Peanut paste — to buy150 g
- Coconut milk — to buy300 ml
- Salt — to buy1 tsp
- Chili pepper — to buy1
Preparation
Cook the sliced onion in the oil for 5 minutes, until translucent, add the garlic and turmeric and cook for 1 more minute.
Add the chicken cut into pieces and brown it for 5 minutes on all sides.
Add the chopped tomato, cook for 5 minutes until it reduces slightly.
Thin the peanut paste with a little hot water until smooth, pour it into the pot with the coconut milk.
Cover and simmer for 25-30 minutes over low heat, stirring from time to time to keep the peanut from catching at the bottom, until the chicken is very tender and the sauce is creamy.
Adjust the salt and chilli, serve with plain rice.
