- Rice noodles — to buy250 g
- Olive oil — to buy3 tbsp
- Egg — to buy2
- Shrimp — to buy150 g
- Soy sauce — to buy2 tbsp
- Oyster sauce — to buy1 tbsp
- Bean sprouts — to buy100 g
- Ciboulette — to buy1 bunch
- Chili pepper — to buy1
Preparation
Soak the flat rice noodles in warm water according to the package instructions, until pliable, then drain.
Heat the oil very hot in a wok, crack the egg straight in and scramble it quickly for 30 seconds.
Add the prawns and stir-fry for 2 minutes until they turn pink.
Add the drained noodles, soy sauce and oyster sauce, stir-fry over high heat for 2-3 minutes, stirring constantly to coat every noodle without breaking them.
Add the bean sprouts and chives, stir-fry for another minute just to soften them slightly without fully wilting.
Serve immediately straight from the hot wok, with a little chilli if you like it spicier.
