Preparation

  1. Sauté the sliced onion and ginger in a drizzle of oil.

  2. Add the diced chicken and curry powder, brown for 5 minutes.

  3. Add the tomatoes and coconut milk, simmer for 20 minutes.

  4. Serve with steamed rice.
