Far breton (Breton prune cake)

- Prunes — to buy250 g
- Egg — to buy4
- Sugar — to buy150 g
- Flour — to buy200 g
- Milk — to buy600 ml
- Butter — to buy50 g
Preparation
Preheat the oven to 180 °C (350 °F) and generously butter a baking dish.
Spread the prunes over the bottom of the dish (you can soak them for 30 minutes in a little tea or rum beforehand if you have time, for extra softness).
In a bowl, whisk the eggs with the sugar until the mixture lightens slightly.
Add the flour little by little, whisking to avoid lumps, then gradually pour in the milk until you get a smooth, runny batter, and finally the melted butter.
Pour the batter over the prunes and bake for 35 to 40 minutes, until puffed, just barely wobbly in the centre and nicely golden on top.
Let cool before unmoulding and cutting into slices.
