Preparation
Prepare all your components ahead of time and keep them well chilled separately: this is a dessert that's assembled more than it's cooked.
Divide the drained red beans and corn among tall glasses or bowls.
Add a layer of grated coconut over the beans and corn.
Fill each glass three-quarters full with shaved ice (quickly blend some ice cubes if you don't have ready-made shaved ice).
Drizzle generously with sweetened condensed milk: it will melt into the ice and bind the whole dessert together as it mixes in.
Add one or two scoops of vanilla ice cream on top.
Serve immediately with a long spoon, inviting everyone to mix it all together ('halo-halo' literally means 'mix-mix' in Tagalog) before digging in.
