Knedlíky (Czech steamed bread dumplings)

Ingredients
- Flour — to buy400 g
- Milk — to buy200 ml
- Baker's yeast — to buy10 g
- Egg — to buy1
- Salt — to buy1 pinch
Preparation
Dissolve the yeast in the warm milk with a pinch of sugar, let sit for 10 minutes until foamy.
In a bowl, mix the flour and salt, add the egg and yeasted milk, knead for 8 minutes until you get a soft dough that pulls away from the sides.
Cover and let rise for 45 minutes at room temperature, until the dough doubles in size.
Knock back the dough and shape it into two or three thick, even logs about 6 cm in diameter.
Bring a large pot of salted water to a gentle simmer (not a rolling boil, which would burst the logs) and carefully lower them in.
Poach for 20 minutes, turning halfway through, until well puffed and cooked through.
Drain, let cool for 5 minutes, then slice with kitchen thread (a knife would crush them) and serve alongside a saucy dish.
