- Chicken — to buy800 g
- Turmeric — to buy1 tsp
- Paprika — to buy1 tsp
- Onion — to buy3
- Garlic — to buy4 cloves
- Ginger — to buy1 piece
- Tomato — to buy2
- Olive oil — to buy4 tbsp
Preparation
Marinate the chicken pieces with turmeric, paprika and a little salt for 15 minutes.
Heat the oil in a pot and sauté the sliced onion over medium heat for 10 minutes until deeply golden and almost jammy: this base is what gives the curry its richness.
Add the garlic and ginger, cook for 1 minute.
Add the marinated chicken and brown it on all sides for 5 minutes.
Add the diced tomato, cover halfway with water and simmer covered for 30 minutes, stirring occasionally.
Uncover and let it reduce for another 10 minutes until the sauce is glossy and a little oil rises to the surface, a sign the curry is ready.
Serve with white rice and steamed vegetables.
