Ingredients
- Chicken — to buy800 g
- Onion — to buy1
- Garlic — to buy2 cloves
- Tomato — to buy2
- Peanut paste — to buy2 tbsp
- Feuille de bananier — to buy4 leaves
- Olive oil — to buy2 tbsp
Preparation
Marinate the chicken pieces with onion, garlic and a little salt for 15 minutes.
Heat the oil in a pan and brown the chicken on all sides for 8 minutes, add the diced tomato and let it simmer down for 5 minutes.
Quickly pass the banana leaves over a flame or a dry pan to soften them without tearing.
Place the chicken and its sauce, along with a spoonful of peanut paste, in the center of a double banana leaf.
Fold the leaf into a sealed parcel and tie it securely so no steam can escape.
Place the parcel in a large pot with a little water in the bottom, cover and steam over low heat for 45 minutes.
Open the parcel at the table: the fragrant steam that escapes is the whole charm of this dish, traditionally reserved for special occasions in Uganda.
