- Corn — to buy300 g
- Kidney beans — to buy300 g
- Neutral oil — to buy1 tbsp
- Salt — to buy1 pincée
Preparation
If using dried beans, soak them overnight then cook for 45-50 minutes in water until tender (or use already-cooked red beans, rinsed and drained).
Shell fresh corn cobs if needed, or use thawed frozen corn kernels.
In a large pot, combine the corn kernels and cooked beans with a little of their cooking water.
Heat the oil in the pot, add the corn-and-bean mixture and sauté for 5 minutes over medium heat.
Season with salt, cover and simmer over low heat for 15-20 minutes, stirring occasionally, until the mixture is soft and the flavors have melded.
Taste, adjust the seasoning and serve hot: mutakura is traditionally eaten as a side or as a simple meal on its own.
