- Flour — to buy200g
- Sugar — to buy200g
- Egg — to buy2
- Vinegar — to buy1 tbsp
- Confiture d'abricot — to buy2 tbsp
- Butter — to buy80g
- Cream — to buy200ml
Preparation
Beat the sugar and eggs until the mixture turns pale, add the apricot jam and vinegar.
Gently fold in the sifted flour, then the melted butter.
Pour into a buttered dish and bake for 35-40 minutes at 180°C, until the cake is nicely golden and a knife inserted comes out clean.
Meanwhile, make the sauce by heating the cream with a little butter and sugar until simmering.
As soon as it comes out of the oven, poke the hot cake in several places and pour the hot sauce over it little by little, letting the cake soak it up fully — this is what makes malva pudding so moist and melting.
Let rest for 10 minutes before serving warm.
