- Egg — to buy4
- Tomato — to buy3
- Bell pepper — to buy1
- Onion — to buy1
- Neutral oil — to buy2 tbsp
- Aleppo pepper flakes — to buy1 tsp
- Feta — to buy50 g
- Salt — to buy1 pincée
Preparation
Cook the onion and bell pepper cut into small dice in the oil over medium heat for 5 minutes, until tender.
Add the diced tomatoes, pul biber and a pinch of salt, simmer for 5-6 minutes, lightly mashing the tomatoes with a spatula, until you get a thick sauce.
Crack the eggs directly into the pan without beating them first, then gently mix with a wooden spoon to scramble them roughly into the tomato sauce: stop cooking while they're still a little runny, they'll keep cooking off the heat with residual warmth.
Crumble a little feta on top if you like — it adds a nice salty contrast — and serve immediately with bread for dipping, menemen doesn't wait.
