Moules marinières (sailor-style mussels)

Ingredients
- Mussels — to buy2 kg
- Butter — to buy30 g
- Onion — to buy1
- Garlic — to buy2 gousses
- White wine — to buy200 ml
- Parsley — to buya handful
Preparation
Scrub the mussels to remove any grit, pull off the small "beards" sticking out, and rinse several times in cold water. Discard any that stay wide open and don't close when tapped.
Melt the butter in a large pot over medium heat, then sweat the sliced onion and garlic for 2 to 3 minutes without letting them colour.
Add the white wine, raise the heat and bring to a boil for 1 minute to cook off the alcohol.
Tip in all the mussels at once, cover immediately and cook for 5 to 6 minutes over high heat, shaking the pot once or twice to spread the heat evenly.
Check that all the mussels have opened (discard any that stay shut), scatter with chopped parsley and serve right away, piping hot, with the cooking liquid and fries or good bread for dipping.
