Ingredients
- Bell pepper — to buy3
- Walnuts — to buy100 g
- Bread — to buy1 slice
- Garlic — to buy1 gousse
- Tomato paste — to buy1 tbsp
- Olive oil — to buy3 tbsp
- Lemon — to buy1
- Sumac — to buy1 tsp
- Chili pepper — to buy1
- Salt — to buy1 pincée
Preparation
Grill the whole bell peppers directly over a flame or under the oven grill, turning regularly, until the skin blackens on all sides.
Immediately seal them in a closed plastic bag for 10 minutes: the trapped steam loosens the skin easily.
Peel the peppers, remove the seeds, then blend them with the walnuts, crumbled bread, garlic, tomato paste and chili until you get a rough paste — keep a little texture, it's not meant to be fully smooth like hummus.
Add the oil and lemon juice little by little, pulsing as you blend, until you reach a thick spread-like consistency that holds on bread.
Taste and adjust the salt, lemon or chili to your liking — muhammara should be mild, tangy and a little spicy all at once.
Serve in a bowl, drizzled with a little oil and sprinkled with sumac, with flatbread or crunchy vegetables for dipping.
